About this good practice
The project concerned conducting research in order to develop the process of colouring food production, aiming at the use of various techniques for separating the colouring substance from fruit marc (being the waste product of juice production). The colouring extract obtained as the final product is not classified as a pure colouring substance hence, as a natural food ingredient, allows the food producer to use so called "clean label". The project it has been classified as good practice due to its innovative character. The implementation of the project contributed to the reduction of the negative impact on the environment in the processing plant. As a result of the work carried out, some very modern technological solutions have been implemented and thanks to this the only food dyeing plant in Poland was created. The good practice matches the subject-matter objective very well: the infrastructure and scientific potential/abilities in terms of tests and innovations. During the project implementation, a number of research works were carried out, intended to promote the development of the entire process of dyed food production. The project responds to such challenges as:

•microbiological safety.

Evidence of success
Basing on acquired experience, the firm may expand the product base. Good experience allows further research to use other by-products friuts. This solution contribiute to knowledge transfer to the food production sector. project implementation has contributed to reducing the negative impact on the natural environment. Mazovia as a leader in fruit production through implemented solutions reduce the amount of waste.

The project is coherent with the environmental undertakings. It also affects the innovation policy and regional development by:
